Production

Fresh milk is gently pasteurized and set with rennet and traditional Bulgarian lactic cultures — the same Lactobacillus bulgaricus family famed for Bulgarian yogurt. The curd is cut, drained, and cut into blocks, then aged for weeks in a natural saline brine inside wooden or clay containers.
